Taco Cottage Cheese Bowl (High Protein & Diabetic Friendly)
Sometimes the simplest ingredient can completely change the way you eat. Cottage cheese has become one of my favorite diabetic-friendly staples because it's packed with protein, low in carbohydrates, and incredibly versatile.
If you've followed my journey, you already know I'm always looking for ways to enjoy comfort food while making smarter choices for my blood sugar. This Taco Cottage Cheese Bowl checks every box—it's hearty, filling, and loaded with taco flavor without relying on a pile of carbs.
Front Porch Tip: Don't be afraid to use cottage cheese as a substitute in recipes. I use it all the time instead of higher-carb or lower-protein ingredients because it helps keep me full longer while adding a creamy texture.
