Almond Flour Shortcake

  • 2½ cups almond flour
  • ¼ cup coconut flour
  • ⅓ cup granulated monk fruit sweetener
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 eggs
  • ⅓ cup melted butter
  • ⅓ cup sour cream
  • 1 teaspoon vanilla extract

Cheesecake Filling

  • 16 ounces cream cheese, softened
  • ¾ cup granulated monk fruit sweetener, blended until fine and powdery
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream

Strawberry Layer

  • 2 pounds fresh strawberries, sliced
  • ⅓ cup granulated monk fruit sweetener
  • 1 tablespoon lemon juice

Step 1 – Bake the Shortcake

  1. Preheat oven to 350°F.
  2. Whisk together almond flour, coconut flour, baking powder, salt, and monk fruit sweetener.
  3. Mix eggs, melted butter, sour cream, and vanilla in a separate bowl.
  4. Combine the wet and dry ingredients.
  5. Spread evenly into a greased 9x13-inch pan.
  6. Bake for 20–22 minutes, or until set and lightly golden.
  7. Cool completely and cut into 1-inch cubes.

Step 2 – Prepare the Strawberries

  1. Mix sliced strawberries with monk fruit sweetener and lemon juice.
  2. Let stand for about 20 minutes so the strawberries release some of their natural juices.

Step 3 – Make the Cheesecake Filling

  1. Blend ¾ cup granulated monk fruit sweetener until fine and powdery.
  2. Beat the softened cream cheese until smooth.
  3. Beat in the finely blended monk fruit sweetener and vanilla.
  4. In a separate bowl, whip the heavy whipping cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.

Step 4 – Assemble the Trifle

  1. Place a layer of shortcake cubes in the bottom of a trifle dish.
  2. Add a layer of cheesecake filling.
  3. Add a layer of strawberries along with a little of their juice.
  4. Repeat the layers until the dish is full.
  5. Finish with cheesecake filling and fresh strawberries on top.

Step 5 – Chill

  1. Cover and refrigerate for at least 2 hours before serving.
