๐Ÿก Pull Up a Chair

Nothing smells quite like a berry cobbler baking in the oven. Growing up in the South, cobbler meant family. It showed up after Sunday dinner, at church potlucks, backyard cookouts, and just because somebody had picked fresh berries that morning. This version celebrates all four berries we love most—strawberries, blueberries, raspberries, and blackberries—wrapped beneath a buttery golden topping that's every bit as comforting as the classic.

❤️ From Michelle

One of the things I love most about this cobbler is that every spoonful tastes a little different. Sometimes you get a burst of blackberry, sometimes a sweet strawberry, and sometimes all four berries together. It's proof that you don't have to give up Southern comfort just because you're making smarter choices.

๐Ÿงบ What You'll Need

Berry Filling

  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup raspberries
  • ½ cup granulated monk fruit sweetener
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Cobbler Topping

  • 2 cups almond flour
  • ¼ cup coconut flour
  • ⅓ cup granulated monk fruit sweetener
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 eggs
  • ½ cup melted butter
  • ½ cup sour cream
  • 1 teaspoon vanilla extract

๐Ÿ‘ฉ‍๐Ÿณ Let's Get Cooking

Step 1 – Prepare the Filling

  1. Preheat oven to 350°F.
  2. Combine all berries in a large mixing bowl.
  3. Stir in monk fruit sweetener, lemon juice, and vanilla.
  4. Mix the cornstarch with cold water until smooth.
  5. Fold the slurry into the berries.
  6. Pour into a greased 9x13-inch baking dish.

Step 2 – Make the Cobbler Topping

  1. Whisk together almond flour, coconut flour, baking powder, salt, and monk fruit sweetener.
  2. In another bowl, mix eggs, butter, sour cream, and vanilla.
  3. Combine wet and dry ingredients until a thick batter forms.

Step 3 – Assemble

  1. Drop spoonfuls of batter evenly across the berry filling.
  2. Leave small openings so the berries can bubble through while baking.

Step 4 – Bake

  1. Bake for 35–40 minutes.
  2. The topping should be golden brown and the berries bubbling around the edges.
  3. Allow to rest for 15 minutes before serving.

๐Ÿ” Pearl's Kitchen Tip

Don't spread the batter smooth over the berries. Little gaps let those beautiful berry juices bubble up while baking, giving your cobbler that old-fashioned Southern look. — Pearl
