Ingredients
- 6 bone-in, skin-on chicken thighs (or your favorite chicken pieces)
- 2 eggs
- 1/4 cup heavy cream
- 1 1/2 cups finely crushed pork rind crumbs
- 1/2 cup almond flour
- 2 teaspoons paprika
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon Italian seasoning
- 1/2 teaspoon cayenne pepper (optional)
- Olive oil cooking spray
Instructions
- Preheat oven to 425°F.
- Line a baking sheet with foil and place an oven-safe wire rack on top.
- Lightly spray the rack with olive oil.
- Whisk together the eggs and heavy cream.
- In another bowl combine the pork rind crumbs, almond flour, paprika, garlic powder, onion powder, salt, pepper, Italian seasoning, and cayenne.
- Dip each piece of chicken into the egg mixture.
- Press firmly into the seasoned coating until completely covered.
- Place chicken on the prepared rack.
- Lightly spray the tops with olive oil.
- Bake for 45–55 minutes, or until the internal temperature reaches 165°F and the coating is golden brown.
- For extra crispiness, broil for the final 2–3 minutes while watching carefully.
