Every Southern kitchen has one recipe that quietly becomes part of everything else. For some families, it's a biscuit recipe that's been passed down for generations. For others, it's pie crust or cornbread. Around our front porch, it's these little cookies.
I created Pearl's Porch Cookies because I wanted something that could stand in for vanilla wafers without relying on wheat flour or expensive specialty products. What came out of the oven wasn't just a substitute—it became one of my favorite recipes.
They're wonderful with a cup of coffee, perfect alongside a glass of cold milk, and absolutely magical layered into puddings, trifles, cheesecakes, and icebox desserts. Sometimes the simplest recipes become the ones you reach for the most.

This might be one of the recipes I'm most proud of. Not because it's fancy, but because it opens the door to so many Southern desserts that I thought I'd never enjoy again. - 2 cups almond flour
- ¼ cup coconut flour
- ⅓ cup granulated monk fruit sweetener
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- 1 large egg yolk
- 6 tablespoons softened butter
- 1 teaspoon vanilla extract
- 1 tablespoon heavy cream (if needed)

Step 1
- Preheat your oven to 350°F.
- Line two baking sheets with parchment paper.
Step 2
- Whisk together the almond flour, coconut flour, monk fruit sweetener, baking powder, salt, and cinnamon.
Step 3
- Add the softened butter, egg yolk, and vanilla extract.
- Mix until a soft dough forms.
- If the dough seems too dry, add the heavy cream one teaspoon at a time until it comes together.
Step 4
- Roll dough into small balls about 1 inch across.
- Flatten each cookie gently until it's about the size of a traditional vanilla wafer.
- Place on the prepared baking sheet about 1 inch apart.
Step 5
- Bake for 10–12 minutes.
- The edges should be just beginning to turn golden.
- Do not overbake. The cookies will continue to firm as they cool.
Step 6
- Cool completely on a wire rack before storing or using in desserts.
